I had a small taro root and wanted to practice making desserts. I cooked taro with coconut water and young coconut meat, then topped it on pie crust. This is perfect for making mini pies.

I had a small taro root and wanted to practice making desserts. I cooked taro with coconut water and young coconut meat, then topped it on pie crust. This is perfect for making mini pies.

Steam the taro until soft, then mash it until smooth. Reserve some diced taro for texture. Combine all filling ingredients in a saucepan over low heat and stir constantly. If the mixture is too thick, add coconut water to loosen.

For the pie crust, mix the dry ingredients together. Add the butter and knead until combined, then add the yogurt. Shape the dough to fit your desired molds; this recipe makes about 8 mini pies.

Preheat the oven for 10 minutes. Bake the pie crusts at 400°F (200°C) for 20 minutes, then let them cool. Spoon the taro filling on top and bake for another 15 minutes. Optionally, sprinkle sugar on top and broil to caramelize the sugar.

Let the pies cool and set before serving. Enjoy! 🥧🥥
