A fun little recipe to celebrate the end of white asparagus season. Yum!

Peel the asparagus carefully, then slice them. Place them in a skillet over medium heat. Slice some smoked bacon (or smoked turkey) to add fat, and add it to the pan. Cook for about 10 minutes to brown everything, covering the skillet.

Slice the zucchini, uncover the skillet, and add the zucchini pieces. Let them cook gently, still over medium heat. Crack four eggs into a bowl. Add salt and a splash of milk.

Heat another, deeper skillet. Add butter and a pinch of salt. When hot, pour in the egg mixture. As it starts to set, add the contents from the other skillet. Try to flip the forming omelette. It might get a bit messy, but that's okay—it’s very tasty. Serve and enjoy!
