Snake Gourd Coconut Stir Fry ( புடலங்காய் தோரன்) — simple, healthy, and packed with coconut flavour. A Kerala classic!
Steps

Heat oil in kadai. Once hot, temper with Mustard seeds, cumin seeds. Once tempered add channa dal, curry leaves, broken red chilli.

Once channa dal roasted add chopped onion. Add bit of salt and turmeric powder. Saute a bit.

Now add chopped snake gourd. Sprinkle little water, close with lid and cook until snake gourd done 90%.

Grind dry red chilli, garlic, shallot and curry leaves into course paste.

Add this to snake gourd and mix. Adjust the salt level. Now add grated coconut and chopped coriander. Mix and switch off the flame.
