Ingredients

2-3 servings
  1. 1 lb Chicken Thighs & Drums
  2. 1 tspsalt
  3. 2 tspchicken bouillon powder
  4. 1/2 tbspsugar
  5. 1/2 tspblack pepper
  6. 1 tbspmadras yellow curry powder
  7. Curry
  8. 2 tbspminced lemongrass
  9. 1 tbspminced garlic
  10. 1 tbspminced shallots
  11. 4bay leaves
  12. 1 cupwater
  13. 1 cupchicken stock
  14. 1lemongrass stalk
  15. 10 ozcoconut milk
  16. 1/2carrot cut
  17. 1potato cut
  18. 1/2yellow onion sliced
  19. 1 tbspfish sauce
  20. 1 tspsalt
  21. 1 tbspsugar
  22. DashMSG & pepper
  23. Baguette

Cooking Instructions

    Marinate chicken for at least 15 mins or overnight.

    Add veggie oil in a wok/skillet and sautee the lemongrass, garlic, shallots, and bay leaves for 2 mins.

  3. 3

    Add in the chicken & sautee for a bit. Add in lemongrass stalk, water & chicken stock.

  4. 4

    Cover and let simmer for 30 mins then remove the lemongrass stalk & bay leaves.

  5. 5

    Add in coconut milk, potatoes, carrots, yellow onions, other seasonings, then let simmer for 10-15 mins.

  6. 6

    Garnish and serve with a baguette!
