I only just discovered that we can make pizza base with potatoes. Super easy to make and surprisingly delicious. #July2026

Peel and cut potatoes into quarters and simmer in salted water for 20 minutes. Drain and mash them on a floured pastry board and let it cool. While the potatoes resting, prepare the filling before continuing with the dough.

Once it is cooled, add flour, egg, nutmeg, oil and salt and knead into a smooth dough.

Divide into four pieces and roll each portion about 15 cm round 1 cm thick, drizzle with olive oil.

Slice the mushrooms into thin slices, melt the butter and 1 tbs olive oil in a pan and sauté over high heat for 5 minutes or until liquid has evaporated. Let is cool.

Cut the ham into strips or squares together with the drained mozzarella then mix the two together. Add the grated cheddar and combine all with the cold mushrooms.

Drain tomatoes and cut them up to small pieces, and season with Italian seasoning salt and pepper.

Pre-heat oven to 220c (425 F), Place the dough rounds on a lightly oiled baking tray and top with tomatoes and mushroom filling. Sprinkle a little olive oil and bake for 25-30 minutes
