Make ingredients ready. Wash, peel and grate the beetroots.

Add oil in a pan,add cumin seeds, asafoetida,curry leaves and chopped chillies. Saute for a minute.

Now add grated beet,salt, coriander powder, lemon juice and fresh coriander. Mix everything well and stir-fry for 2-3 minutes.(Don't overcook) It is supposed to be crunchy.

Gujarati beetroot Sambharo is ready. Serve with roti/chapati. No need for any subji if this sambharo is in your dish. Enjoy.
