When you want something refreshing, this recipe is perfect. The red onion gives this gazpacho its unique flavor. Absolutely delicious.

Cut the watermelon and remove the rind. Chop the onion and peel the tomato, removing the seeds. Blend everything together with a blender.

Soak the bread in water to soften it, then squeeze out the excess water and add it to the blender.

Once everything is well blended, add the olive oil, salt, and vinegar. Taste and adjust the seasoning as needed.

Meanwhile, place two slices of serrano ham in the microwave to make them crispy. I tried this with melon gazpacho and loved it, so I thought it would be great with watermelon too. It was! Microwave for 2 minutes 30 seconds on high power.

Continue with the gazpacho. Once blended, cover and chill until ready to serve.

Serve cold, drizzle with a little olive oil, and top with the crispy ham. Enjoy!
