Went to the market and found some fresh jackfruit. Used the jackfruit pods for fruit dessert, and kept the jackfruit fibers to braise with pork or fish for a rich, flavorful dish.

Rinse the pork and slice thinly. Separate the jackfruit fibers. Marinate the jackfruit with 1 tablespoon oyster sauce, 1 tablespoon sesame oil, and 1 teaspoon seasoning powder. For the pork, marinate with 1 tablespoon fish sauce, 1 tablespoon oyster sauce, 1 tablespoon sesame oil, 1 tablespoon seasoning powder, 1 tablespoon sugar, and black pepper. Chop the shallots and garlic, then mix everything well to let the flavors absorb into the pork.

Sauté the shallots and garlic, then add the pork and stir-fry until the pork firms up. Add the jackfruit and stir to combine.

Pour in enough water to cover the pork. Bring to a boil, then adjust the seasoning to taste. Lower the heat, cover, and simmer until the liquid is almost gone and the pork is tender. Add chopped Vietnamese coriander and black pepper, and mix well.

Serve hot with rice and pickled mustard greens for a delicious meal.
