Preheat the oven to 350°F (180°C).

Cut the cherry tomatoes in half. Sprinkle the bottom of the baking dish with brown sugar and arrange the tomatoes evenly.

Bake for at least 15 minutes, until the tomatoes are caramelized.

Peel and roughly chop the onion and garlic. Sauté them in a skillet with olive oil.

Cut the chorizo and eggplant into pieces. Add them to the skillet along with the thyme, a pinch of salt, and pepper.

Add about 1/2 cup water (120 ml) and cook, stirring regularly. Once the eggplant is cooked and the water has evaporated, blend the mixture until smooth.

Spread the eggplant and chorizo mixture over the tomatoes.

Add the sliced mozzarella cheese on top.

Place the puff pastry sheet over the filling, making a small hole in the center. Bake for 30 to 40 minutes.

Invert the tart onto a plate and enjoy!
