Wash the potatoes and cut them into thick wedges. Boil the potatoes in boiling water for just 3 minutes, then drain and immediately place them in ice water until completely cooled.

Drain well, then fry in hot oil until golden and crispy. Remove from the oil and place on paper towels.

Sprinkle with salt, pepper, thyme, coriander, cumin, paprika, and chili powder. Toss well to coat. Serve hot and enjoy!
