Greek Quinoa Salad (Horiatiki with Quinoa)!

🍅 A fresh and easy Greek salad (Greek Salad), or 'horiatiki' as we call it in Greece.
🫑 It's a great side dish or a delicious meal for lunch or dinner!
🧀 You can also make it vegan by leaving out the feta cheese!
Greek Quinoa Salad (Horiatiki with Quinoa)!
🍅 A fresh and easy Greek salad (Greek Salad), or 'horiatiki' as we call it in Greece.

Rinse the quinoa under cold water using a fine mesh strainer. Add the quinoa, water, and salt to a medium saucepan. Bring to a boil over medium heat, then reduce the heat and simmer for about 15 minutes, or until the water is absorbed. Remove from heat and fluff with a spoon. Let the quinoa cool to room temperature.

Cut all the vegetables into cubes or slices, and slice the olives if you like. Mince the garlic.

In a bowl, mix the quinoa with the vegetables and olives.

Add the olive oil, apple cider vinegar, Dijon mustard, honey, garlic, salt, pepper, and oregano to the bowl.

Serve with feta cheese on top if desired, and enjoy as a light meal or side dish!
