Greek Quinoa Salad (Horiatiki with Quinoa)!

Ingredients: 1 cup quinoa (about 170 grams); 1 large tomato or 2 Roma tomatoes or 2 cups Campari tomatoes; 1 cucumber; 1 small green bell pepper; 1 small onion; 1 clove garlic; 10 olives; 2 tablespoons olive oil; 1 tablespoon apple cider vinegar; 1 teaspoon Dijon mustard; 1 teaspoon honey; 1 teaspoon dried oregano; 1/2 teaspoon salt; 1 little black pepper; 1 piece feta cheese, about 7 oz (200 grams)

🍅 A fresh and easy Greek salad (Greek Salad), or 'horiatiki' as we call it in Greece.
🫑 It's a great side dish or a delicious meal for lunch or dinner!
🧀 You can also make it vegan by leaving out the feta cheese!

1 cupquinoa (about 170 grams)
1large tomato or 2 Roma tomatoes or 2 cups Campari tomatoes
1cucumber
1small green bell pepper
1small onion
1 clovegarlic
10olives
2 tablespoonsolive oil
1 tablespoonapple cider vinegar
1 teaspoonDijon mustard
1 teaspoonhoney
1 teaspoondried oregano
1/2 teaspoonsalt
1little black pepper
1 piecefeta cheese, about 7 oz (200 grams)

Rinse the quinoa under cold water using a fine mesh strainer. Add the quinoa, water, and salt to a medium saucepan. Bring to a boil over medium heat, then reduce the heat and simmer for about 15 minutes, or until the water is absorbed. Remove from heat and fluff with a spoon. Let the quinoa cool to room temperature.

Cut all the vegetables into cubes or slices, and slice the olives if you like. Mince the garlic.

In a bowl, mix the quinoa with the vegetables and olives.

Add the olive oil, apple cider vinegar, Dijon mustard, honey, garlic, salt, pepper, and oregano to the bowl.

Serve with feta cheese on top if desired, and enjoy as a light meal or side dish!
