Reheat the cooked pork offal by steaming. Blanch the scallion greens and set aside.

Cut the tofu into pieces and fry until golden on all sides.

Mix the shrimp paste with sugar, lime juice, chopped chili, and vegetable oil. Stir well until foamy. Add the chopped chili.

Cut the rice vermicelli into serving-size pieces. Arrange on a platter with the tofu, pork offal, and the washed and drained herbs: spearmint, Vietnamese balm, and perilla.

Serve with the prepared shrimp paste dipping sauce.
