This vegetarian twist brings the same soulful flavors, using a medley of fresh vegetables slow-cooked in Kashmiri spices, fennel, and a touch of creamy yogurt. The result is a hearty, wholesome curry that’s as indulgent as the original.

Mix the vegetables and wash properly. Add all powdered spices in a yoghurt and mix. Keep aside. Make ingredients ready. Heat oil and butter and sauté whole spices until fragrant. Add onion and cook till golden, then stir in chilli -ginger-garlic paste.

Add the vegetables and green garlic and stir. Let them cook and simmer on a slow flame.cover the pan.

Now add Tomato puree with water and cook.

When the vegetables are half cooked, slow the flame and add spice mixed yoghurt, Kashmiri chilli powder and garam masala, stir gently. Cover the pan till veggies cooked completely.

Vegetable Rogan Josh is ready. Transfer in the bowl. Garnish with onion rings,Sprinkle fresh coriander and chopped leafy garlic.

Serving Suggestion: Serve hot with steamed basmati Jeera rice, turbo naan for a royal Kashmiri-inspired meal.
