Wash the chicken and set aside. In a wok heat coconut oil, add crushed ginger and garlic, chopped green chiliies and stir for 10 seconds, add chopped onions and on medium flame cook till golden colour

Add red chilli powder, coriander powder, turmeric powder, garam masala powder and mix well, add curry leaves and chicken and coat all spices with the chicken

Add 1/4 cup hot water and stir, keep flame low and every 2 mins stir 5 times. The water is less and chicken can get burnt in the bottom. So stirring is essential

Don’t overmix the chicken once water is added. Add some more curry leaves and stir one last time, set aside to serve
