Mix sooji, buttermilk/curd, salt, garam masala, and water to make a batter.

Let the batter rest for 2 hours.

In a bowl, mix tomato, onion, green chilies, and coriander. Add red chili powder, amchur, and chaat masala.

Heat a pan for uttapam.

Add eno to the batter and mix gently.

Pour batter onto the pan, spread thickly like uttapam.

Sprinkle the vegetable mix evenly on top.

Cook on low heat until one side is golden, then flip.

Add oil as needed and cook both sides well.

Serve hot on a plate.
Tips
For extra fluffiness, ensure the batter is well-mixed after adding eno and cook on low heat.
