Ingredients

  1. 2 bowls(about 200g) Sooji (semolina)
  2. 2 bowls(about 200ml) Buttermilk or curd
  3. to taste Salt
  4. 1 tspGaram masala
  5. as neededWater
  6. 1Tomato (small, finely chopped)
  7. 1Onion (small, finely chopped)
  8. 2-3Green chilies (finely chopped)
  9. 2 tbspCoriander leaves (chopped)
  10. to taste Red chili powder
  11. 1/2 tspAmchur powder
  12. 1/2 tspChaat masala
  13. 1/2 tspEno fruit salt
  14. as neededOil

Steps

  1. 1

    Mix sooji, buttermilk/curd, salt, garam masala, and water to make a batter.

  2. 2

    Let the batter rest for 2 hours.

  3. 3

    In a bowl, mix tomato, onion, green chilies, and coriander. Add red chili powder, amchur, and chaat masala.

  4. 4

    Heat a pan for uttapam.

  5. 5

    Add eno to the batter and mix gently.

  6. 6

    Pour batter onto the pan, spread thickly like uttapam.

  7. 7

    Sprinkle the vegetable mix evenly on top.

  8. 8

    Cook on low heat until one side is golden, then flip.

  9. 9

    Add oil as needed and cook both sides well.

  10. 10

    Serve hot on a plate.

Tips

For extra fluffiness, ensure the batter is well-mixed after adding eno and cook on low heat.
