I LEARNT THIS LOVELY RECIPE FROM MY LOVELY DAUGHTER-IN-LAW. And I am so proud of it.
Here, the lesser consumed masoor dal is used to make protein - rich dosa. Moreover, stuffing is also protein-power packed. These dosas turn out to be very crispy.
Such recipes erase the requirement for protein supplements, especially for vegetarians. The orange colour of the batter makes it more palletable.

For Dosa Batter: Soak rice and methi seeds for 8 hours. Soak masoor dal for 4 hours. Soak poha and rava for 30 minutes.

Drain masoor dal and take in mixie. Add in chopped onions, garlic and 1 grated carrot. Also add in dhanajira, chilli powder and garam masala.

Churn to a smooth batter using water as required. Transfer to a bowl.

Drain and churn the rice and methi seeds along with soaked poha and rava. Crush to a smooth paste.

Mix both. Churn them together again for a homogenous batter.

Transfer to a big vessel. Ferment for 3-4 hours. Add salt to the batter. Meanwhile, prepare the stuffing. Boil soya chunks in water to which salt is added. Drain, cool and squeeze out the water.

For Protein-packed Stuffing: Chop boiled soya chunks into small pieces. Ready all the stuffing ingredients. Now in oil do the tempering of rai, urad dal, red chilli and hing. Add in ginger-garlic paste and chopped green chillies. Saute for 1 minute.

Add in hard vegetables first, -carrot and beans. Saute in open pan for 2 minutes. Add in onions, salt and haldi.

Add in dry masalas. Mix in protein rich ingredients-chopped soya chunks and grated paneer.

Mix well for 1 minute only. Do not overcook the paneer, else it will get rubbery and chewy. Mix in coriander

For Making of Masoor Dal Dosa: Mix the batter vigorously.Heat a tawa. Spread a ladle full of batter and form a dosa. Roast using ghee. When almost done place the stuffing.
