NEI CHORU (ghee rice...a one pot kerala rice dish)

Wash rice, soak in water for 1/2 hr, strain it, keep aside.

Take a deep bottom pan, add 2 tbsp ghee, heat it, lower the flame, fry kaju & kishmish separately till pink, take out in a dish, keep aside.

Add rest of the ghee in the same pan, heat it, moderate the flame, add whole garam masala & saunf, saute it for 10 sec.

Now add onion, keep the flame low, stir fry it until brown, take out some browned onion for garnish.

In goes ginger paste, mix it well.

Add in strained rice, mix it well, stir fry it for a minute.

Now add 3.5 cup water (adjustable)& salt, increase the flame, mix it well, give a boil.

Add some fried kaju & kishmish, mix it well, cook it until water is absorbed. Cook it covered on low flame until completely done. Turn off the flame, open the lid after 10 minutes.

Take out in a serving dish, garnish it with rest of the fried kaju & kishmish, brown onion & a dhania sprig...
Tips
U can use basmati rice in place of kaima rice if not available.
