Steps

Cut the drumstick into lengthwise of a little finger size. Cut potatoes into big cubes. Pressure cook them till 2 whistles blow.

Make a smooth creamy paste of peanuts, sesame seeds, besan, and curd in a mixer jar.

Take a pan, add oil, rai, jeera, and hing. Mustard seeds splutter, add ginger chili, and garlic along with chopped onions, and sauté until translucent. Add tomato puree and cook for 2 minutes.

Add turmeric powder, red chili powder, garam masala, and coriander jeera powder. Stir well. Cook till the oil releases. Add 2 tsp of water to avoid burning all masalas.

Add creamy paste of besan, curd, peanuts, and sesame seeds. Stir it and cook for a minute. Add water as required. When it starts boiling add the cooked drumstick and potato cubes.

Add water and adjust the consistency of the gravy. Now add salt and jaggery. Cook for 2 minutes. Turn off the gas. Add lemon juice, and kasoori methi. Mix well.

Knead wheat flour dough. Make 2 layers of open roti/chapati. Roll 2 chapati balls into a small size. Apply ghee on 1 and dust dry flour, put 2nd on it, press it, roll into a chapati size. Roast both sides on tawa. Open the layers of chapati and apply ghee to each roti.

Soak basmati rice for 30 mins. Cook it in a pressure cooker till 2 whistles blow. Rice is ready to serve.

Transfer to a serving bowl, sprinkle coriander. Drizzle red chilli oil to garnish and enhance the flavor. Serve hot with roti and rice. A perfect comfort dinner.
