Ingredients

Serves 1 serving
  1. 1whole fish, such as trout or sea bass
  2. as neededAll-purpose flour,
  3. 2 tablespoonshoney with ginger (with ginger pieces if possible)
  4. 4 tablespoonssoy sauce
  5. 2 tablespoonsmirin
  6. 1 tablespoonsake
  7. as neededUnsalted butter,
  8. 1green onion or chives, chopped

Steps

  1. 1

    Rinse and prepare the fish.

  2. 2

    Put some flour on a plate and coat the fish on both sides, shaking off any excess.

  3. 3

    In a large skillet, melt a little butter with a bit of oil and sear the fish on both sides over low heat until golden brown.

  4. 4

    Lightly drain excess fat, then add the honey, soy sauce, mirin, and sake. Stir everything together.

  5. 5

    Add a little water and cover to cook further.

  6. 6

    When the fish is cooked, if the sauce is too thin, remove the fish and reduce the sauce until thickened.

  7. 7

    Serve the fish topped with the sauce and chopped green onion or chives.
