Rinse and prepare the fish.

Put some flour on a plate and coat the fish on both sides, shaking off any excess.

In a large skillet, melt a little butter with a bit of oil and sear the fish on both sides over low heat until golden brown.

Lightly drain excess fat, then add the honey, soy sauce, mirin, and sake. Stir everything together.

Add a little water and cover to cook further.

When the fish is cooked, if the sauce is too thin, remove the fish and reduce the sauce until thickened.

Serve the fish topped with the sauce and chopped green onion or chives.
