I adapted this recipe from Eric Kim’s version from the NYT. Makes a tasty breakfast served with steamed rice.

Beat the eggs in a bowl and mix with broth and a pinch of salt.

Strain the mixture into a microwave-safe bowl for a smoother texture. You can also pop the bubbles with a fork or spoon.

Cover the bowl with a plate and microwave at 500W (not full power!) for 5-7 minutes or until the eggs have set (every microwave is different so check after 5 minutes and add 30 second intervals until done).

Let cool slightly in the microwave (the bowl will be very hot!). Then carefully remove.

Drizzle soy sauce and sesame oil on top, sprinkle with black sesame seeds and chopped green onions. Enjoy!
Tips
For a smoother texture, strain the egg mixture before cooking.
