Wash carrot and then trim their tops and grate them using a large hole grater.

Then transfer to a bowl.Then take heavy bottomed kadai and add 1 tbsp ghee.

Then cook for 4 minutes.The carrot will release it's moisture so cook until the water evaporates further add the milk stir well and cook over medium flame high then add milk powder stir milk add in carrot mixture.cook for 8 minutes.Milk has reduced.

Then add sugar cook again 5 minutes then to turn light golden brown add1 tsp ghee the raisins and add 1 tsp cardamom powder and chopped dry fruits.stir briefly

Pour ghee and nuts mixture over the halwa now gajar halwa is ready.Transfer to a serving bowl.And decorate with chopped almond and cashew nuts. Serve and enjoy Christmas festival. Enjoy!!!
