It's an authentic Bengali breakfast. These are khasta puris with a filling of green peas and mild masalas. It tastes best with Dum Aaloo.
Steps

First we will make Aaloor Dum. Boil the baby potatoes without pealing it, just by adding salt, wait for 5 whistles on medium flame.. Then peel them. Now heat a kadai & put some oil and fry the potatoes by adding some salt, turmeric and kashmiri red chilli powder, spicy red chilli powder..Now keep it aside.

Next coarsely grind the onion, cut the tomato into small pieces and keep them aside. Now on the same kadai put 4 tbsp of oil, heat it then add jeera, elaichi, cinnamon stick, dried red chilli, bay leaf. Then add onion paste, tomato pieces, ginger-garlic paste, turmeric powder, garam masala powder, kashmiri red chilli powder, salt, sugar and mix everything well. Fry them on a low flame until oil starts releasing from the masalas.

Now add the fried baby potatoes and coat it well with the masalas. Saute it for about a minute. Then add a cup of water. Then add some salt, turmeric powder, if required. Mix everything well, cover the kadai and cook it on a low flame for 10 to 12 mins to give dum..After 12 mins, add chopped coriander leaves and mix everything well once again. Serve hot with puris or naan.

Firstly in a bowl, add maida, salt & ajwain. Mix it, now gently add water & Knead it into a semi-soft dough, as shown in the image below. Now cover the dough with a damp cloth and rest it for about half an hour to one hour.

Now keep water for boiling, once it starts boiling, add half tsp sugar and half tsp salt. Mix it. Now add green peas to it. Let it boil. Then strain them and keep it aside.

Once it cools down, aad the boiled peas into a grinding jar, add a piece of ginger, green chilli & grind it into a smooth paste.

Now heat a pan, add a tsp of ghee/oil to it. Once it becomes hot, add a tsp of sauf, grated ginger & hing to it. Then add the grinded matar to it. Combine everything well, keep the flame low. Now add 1 tsp of sauf powder, salt and 2 tsp sugar to it.

Mix it & cook it until it becomes a dough kind or lumpy in texture. Now keep this mixture aside.

Now make small balls out of the dough and put 1 tsp of peas mixture into the dough and cover & seal the edges of the ball. Do the same with the rest of the balls. Now pour a tbsp of oil over the balls.

Now roll each one of it into a thick puri, by giving it a gentle pressure, as shown in the image below. Now heat some oil in a kadai, for deep-frying. Once the oil gets hot, fry the puris, one but one.
