Cut the chicken into pieces. Season with salt, pepper, and garlic. Add the egg and cornstarch, then mix until well combined.

Fry the chicken in hot oil until golden brown, then drain.

In a preheated skillet, add oil, ginger, garlic, ketchup, water, soy sauce, sugar, and vinegar. Let it reduce slightly.

Add diluted cornstarch and stir until the sauce thickens. Add the fried chicken and mix well.

Sprinkle sesame seeds on top.

For the rice, scramble the eggs in oil, then add the rice, soy sauce, and oyster sauce (optional). Mix well.

Serve the Pollo Tipakay with the fried rice.
