  1. 1large bowl leftover rice
  2. 1/4 cupfinely chopped carrots (about 30 grams)
  3. 1/4 cupfinely chopped onion (about 30 grams)
  4. 1/4 cupfinely chopped juicy tomato (about 40 grams)
  5. 1bell pepper, finely chopped
  6. 1 tablespoonsweet corn (about 15 grams)
  7. 2 stalksgreen onions, finely chopped
  8. 1 teaspoonfinely chopped garlic
  9. 2green chilies, finely chopped
  10. 1 teaspoonoil
  11. 1 teaspoonbutter
  12. 1/4 cupboiled kidney beans (about 40 grams)
  13. 1 teaspoonground cumin
  14. 1 teaspoonground black pepper
  15. 1 teaspoonturmeric powder
  16. 1 teaspoonsalt, or to taste

    Chop the rice, kidney beans, and all the vegetables and set them aside.

    Heat the oil and butter in a pan. Add the chopped garlic and green chilies.

    Add all the chopped vegetables to the pan and mix well.

    Add the finely chopped juicy tomatoes.

    Add the spices: ground cumin, black pepper, turmeric, and salt to taste.

    Mix in the kidney beans and rice, and stir-fry for about 30 seconds.

    Mix everything well. The Mexican rice is ready.
