I made Mexican rice using leftover rice, adding lots of vegetables, kidney beans, and corn to create a healthy and delicious recipe that everyone enjoyed.

I made Mexican rice using leftover rice, adding lots of vegetables, kidney beans, and corn to create a healthy and delicious recipe that everyone enjoyed.

Chop the rice, kidney beans, and all the vegetables and set them aside.

Heat the oil and butter in a pan. Add the chopped garlic and green chilies.

Add all the chopped vegetables to the pan and mix well.

Add the finely chopped juicy tomatoes.

Add the spices: ground cumin, black pepper, turmeric, and salt to taste.

Mix in the kidney beans and rice, and stir-fry for about 30 seconds.

Mix everything well. The Mexican rice is ready.

Serve the hot Mexican rice made with leftover rice. Enjoy it with any dip; I served it with salsa.
