Vietnamese Pork Skin Sausage with Green Bird’s Eye Chili

Scrape and clean the pork skin, then boil it with salt and ginger until cooked.

Remove the pork skin and soak it in ice water to make it crisp, then cut into thin strips.

Mix the pork skin with pork paste, fish sauce, MSG, ground pepper, whole peppercorns, garlic powder, and green bird’s eye chilies.

Wrap the mixture tightly in banana leaves and tie securely.

Steam for 40 minutes, let cool, then slice and serve.
