This is a quick elegant chicken dish good for company or the family. Juicy chicken is topped with a creamy delicious champagne mushroom sauce. Serve with rice pasta or bread and a salad for a great meal.

Ingredients

  1. 1 poundboneless, skinless chicken breasts, slice into 1/4 inch
  2. slices
  3. 1 teaspooncajun seasoning
  4. 1 tablespoonolive pil
  5. 2 tablespoonsbutter
  6. 2shallots, minced
  7. 2garlic cloves, minced
  8. 2red chilis thin sliced
  9. 8 ouncesbutton musjrooms, sliced
  10. 1/4 cupchampagne or sparkling wine
  11. 1/4 cupchicken stock
  12. 1/2 cupheavy cream
  13. to tastesalt and pepper
  14. 1 teaspoonhot sauce such as franks red hot
  15. 1 tablespooneach fresh thyme, rosemary and parsley
  16. 2green onions, sliced

Cooking Instructions

  1. 1

    Heat olive oil in a skillet, season chicken with cajun seasoning and cook in batches until golden and cooked tgrough, removing.to a plate as done

    Add butter to skillet and melt add shallot, mushrooms, chilis abd garlic and cook until mushroons are tender

  3. 3

    Add champagne and cook until almost gone

  4. 4

    Add stock, cream, sat, pepper and hot sauce and cook until its a sauce consistancy

    Add herbs and green oniond, taste for seasoning and serve over chucken.

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
