1/4 cupall-purpose flour (about 30 grams)
3eggs
2 ozIberian ham (about 60 grams)
2 tablespoonsolive oil (about 30 ml)

Clean and slice the artichokes into thin pieces. Place them in water with the juice of 1 lemon to prevent browning.

Drain the artichokes and lightly coat them in flour.

Fry the artichokes in olive oil until golden and crispy. Drain excess oil and season with salt to taste.

Fry the eggs in plenty of hot oil so the edges get crispy and the yolks stay whole.

Arrange the artichokes on a plate, place the fried eggs on top, and add the Iberian ham over everything. Serve immediately.
