Ingredients

30 minutes
Serves 3 servings
  1. 1 1/4-1 1/3 poundsturkey breast, cut into stew-sized cubes (about 500-600 grams)
  2. 1 jarpickled pearl onions, drained
  3. 1/3 cupsweet red vermouth (about 80 ml)
  4. Spices: coarse salt, black pepper, and oregano

Steps

30 minutes
  1. 1

    Sauté the turkey in a skillet with a drizzle of extra virgin olive oil, seasoning with salt, pepper, and a touch of oregano, until browned. Set aside.

  2. 2

    In the same oil, sauté the drained pickled onions until lightly browned.

  3. 3

    Reduce the heat to low, add the vermouth, stir, and let it reduce almost completely, stirring occasionally.

  4. 4

    Increase the heat slightly, return the turkey to the skillet, and sauté until everything is well combined. Serve and enjoy!
