Sauté the turkey in a skillet with a drizzle of extra virgin olive oil, seasoning with salt, pepper, and a touch of oregano, until browned. Set aside.

In the same oil, sauté the drained pickled onions until lightly browned.

Reduce the heat to low, add the vermouth, stir, and let it reduce almost completely, stirring occasionally.

Increase the heat slightly, return the turkey to the skillet, and sauté until everything is well combined. Serve and enjoy!
