Bhindi with Sesame Seeds Paste is a flavourful, nutty, savory okra dish.It is often prepared as a dry sabzi or a rich gravy with or without onion and as a side with roti or dal and rice in lunch or dinner. Here it is made without onion and adding a paste of sesame seeds, green chillies and few cashewnuts gives a silky smooth texture to the dish.

Here it is made without onion and adding a paste of sesame seeds, green chillies and few cashewnuts gives a silky smooth texture to the dish.

First wash Bhindi or okra and pat dry.Cut the tips and tail and chop into three pieces.Soak sesame seeds for 10 minutes and make a paste of it with few cashewnuts and 2 green chillies adding 3-4 tbsp water.Deseed and chop tomato into cubes.

Heat oil in a wok and sprinkle kalonji (nigella), saunf (fennel), methi (fenugreek) seeds.When they splutter, add bhindi after smearing 1/4 tsp salt.Reduce heat and fry bhindi in medium flame till light golden brown. Add chopped tomato and stir fry for 2 minutes. Add little turmeric, red chilli powder, salt and sugar to taste.Next add sesame cashewnuts and green chilli paste and fry 5 minutes till oil leaves sides.

Add 2-3 tbsp water and cook 2-3 minutes till bhindi is properly cooked.Fry till masala is dry and coats bhindi.

Drizzle 1 tsp ghee and serve hot with dal and rice or roti in lunch or dinner.
Tips
It is important to wash and pat dry bhindi before chopping them as bhindi is slimy.
