Heat oil in a pan, temper mustard seeds, cumin seeds, hing, sliced garlic, and curry leaves until fragrant.

Add the chopped onions and sauté until they turn golden brown. Then, add ginger garlic paste and cook until the raw smell disappears.

Stir in the chopped tomatoes and cook until they become soft and mushy.

Add the chilli powder, Kashmiri chilli powder, coriander powder, turmeric powder, and salt. Sauté for about 2 minutes to combine the spices well.

Add the prawns to the mixture and mix well. Pour in the water and cook until the prawns are fully cooked and the gravy thickens to your desired consistency.

Garnish with chopped coriander leaves and serve hot with rice or roti.
Tips
Ensure to sauté the onions well for a rich flavor and adjust the spice levels according to your taste.
