An easy way to make beni-shoga (Japanese red pickled ginger) using food coloring.

Steps

Combine the sweet vinegar ingredients in a saucepan, heat to dissolve the sugar, then let it cool.

Wash the young ginger well. Scrape off any discolored parts with a spoon.

Slice to your preferred thickness (1.5 mm recommended). Sprinkle with about 1 tsp salt (extra) and let sit for 5 minutes.

Add to a large pot of boiling water. Once it returns to a boil, cook for 2 minutes.

Drain in a colander and let cool. Once cooled, squeeze out the water firmly and place in a bowl.

Add about 1 tbsp vinegar (extra) and squeeze again. This prevents the sweet vinegar from being diluted.

Combine with the cooled sweet vinegar, mix well, and transfer to a zip bag. Squeeze out the air and seal. Doing this underwater makes it easy to remove air.

Let it marinate in the refrigerator for 1 day. Store in a sterilized jar.

Tips
