Slit each baingan into 4 parts, keeping the stem intact.

Mix groundnut powder, garam masala, ginger garlic paste, cumin coriander powder, chili powder, turmeric, and salt in a plate.

Stuff each baingan with the masala mixture.

Heat oil on medium flame, add hing.

Place stuffed baingan in the pan, sauté until baingan is cooked.

Add remaining masala and 1 cup water, mix well, cook for 2 more minutes.
