  1. 250 gSmall baingan (eggplants)
  2. 1 cupGroundnut powder
  3. 2 tspGaram masala
  4. 2 tspGinger garlic paste
  5. 3 tspCumin coriander powder
  6. 4 tspChili powder
  7. 0.5 tspTurmeric (haldi)
  8. to tasteSalt
  9. 3 tbspOil
  10. 2 pinchesHing (asafoetida)

Steps

  1. 1

    Slit each baingan into 4 parts, keeping the stem intact.

  2. 2

    Mix groundnut powder, garam masala, ginger garlic paste, cumin coriander powder, chili powder, turmeric, and salt in a plate.

    Stuff each baingan with the masala mixture.

    Heat oil on medium flame, add hing.

  5. 5

    Place stuffed baingan in the pan, sauté until baingan is cooked.

    Add remaining masala and 1 cup water, mix well, cook for 2 more minutes.

    Garnish with coriander leaves and serve tasty BAINGAN MASALA. in lunch dinner a

Tips

For extra flavor, you can add a squeeze of lemon juice before serving.
