Take oil in a pan. Add peanuts and roast till they splatter. Stir continuously for even cooking. Add cumin and cook for a few seconds. Add the rest of the ingredients, except coriander leaves. Saute for a few seconds. Turn off the stove. Add coriander leaves and continue to stir until they shrink. Let the mixture cool completely.

Transfer it to a mixi jar and grind. Add the paste to the paneer along with lemon juice, and mix well. Keep aside.

Combine ingredients for spiced butter. Keep aside.

Slit buns at the middle. Apply butter on both the sides. Fill it with the filling. Prepare them all likewise. In a nonstick pan lay a foil paper/ butter paper. Place the filled buns on it. Apply spiced butter on the top surface. Cover it around with a foil paper.

Cover the pan with a lid. Cook it on medium to high heat for 5 min. Reduce the heat and cook for another 5 min. We want the buns to be slightly crunchy that the bottom and soft on the top. The butter should be thoroughly melted and absorbed by the buns.

Enjoy them warm.

Variation: make naan dough by adding chilli flakes, oregano and basil in it. Roll it thick. Spread the filling followed by cheese. Fold it and seal the edges with a fork. Make ¾ length cuts (leaving the edges intact) 1inch apart. Apply butter moderately on the top surface. Bake it till it's golden all around. You may have to flip. Can also bake it in a pan (put butter paper at the bottom)
