  2. 5.3 ozscallops (about 150 grams)
  3. 1 pinchsalt
  4. 1/2 cupwater (about 100 ml)
  5. 1 tablespooncooking oil
  6. 4 clovesgarlic, minced
  7. 1/2 inchginger, minced
  8. 1 tablespoonsugar
  9. 1 teaspoonsesame oil
  10. 1/4 teaspoonwhite pepper powder
  11. 1 teaspooncornstarch
  12. 4 tablespoonswater to dissolve cornstarch
  13. Sauce ingredients:
  14. 1 tablespoonoyster sauce
  15. 1 tablespoonsoy sauce
  16. 1 teaspoonfish sauce
  17. 1 tablespoonketchup

Cooking Instructions

    Cut the broccoli into florets, soak in salt water to remove any worms. Rinse well. Boil water, add the broccoli to the boiling water until slightly softened, remove and soak in ice/cold water, then drain.

    Boil 1/2 cup (100 ml) of water, then add the scallops and a pinch of salt. Boil briefly until cooked. Remove and drain. Save the remaining boiling water for the sauce.

    Heat the oil, sauté the garlic and ginger until fragrant, then add the sauce mixture, sugar, sesame oil, and white pepper powder. Dissolve the cornstarch in water, then pour into the sauce, cook until boiling, thickened, and the sauce is clear and glossy.
