This is the traditional Indian dessert from my mother-in-law's kitchen :)... Mostly made in festival seasons. These are delicate and so rich and creamy that they melt in the mouth :)

Method of Sugar Syrup: In a pan, mix 2 cups of water and 2 cups of sugar and boil. Keep on boiling the syrup until you get a single-thread consistency. When the syrup is ready add the cardamom powder and mix well. Keep aside.

Method of Malpuas: Make a batter of 750 ml of milk, maida, cardamom powder and ripped mashed banana. Heat oil in a Kadai and spread a small amount of the batter into it to form circles about 4″ in diameter. Cook on both sides until golden brown. Drain oil on absorbent paper.

Then put fried Malpuas directly into the sugar syrup. Remove after 2-3 minutes and drain the syrup.

Method of Rabri: Mix the 1 ltr of milk and 1 cup of sugar in a thick-bottomed pan and cook to reduce it to a fourth of its original volume. Stir frequently or the milk will burn at the bottom of the pan.

When the milk has thickened as above, remove it from the fire, allow it cool and then chill in the refrigerator. Serve the malpuas in a plate with a spoon of rabri over them and garnish with pistachios. The authentic dessert is ready to eat :)
