Deviled Chicken (Sri Lankan)

This is a side that was common in our household when I was growing up. I loved deviled chicken whenever my Mom made it for us. We used to eat it with white rice or with fried rice.The fries/wedges adds an extra touch. After all who can resist big pieces of crispy fries soaked in spicy curry?!

This is a side that was common in our household when I was growing up. I loved deviled chicken whenever my Mom made it for us. We used to eat it with white rice or with fried rice.The fries/wedges adds an extra touch. After all who can resist big pieces of crispy fries soaked in spicy curry?!
Cooking Instructions

Put the 12 pieces of skinless chicken drumsticks into a medium/large pot and add water (3/4 ways or just enough for boiling, into the pot).

Add the vinegar and salt (to taste).

Add the chili flakes, cover the pot and let the chicken boil.

Once the chicken has boiled/when there's little bit of liquid left, turn off this stove and drain the liquid into another pot/container and keep aside. Do not throw the liquid!

Add the oil into the pot with the chicken pieces and leave the chicken to fry/brown on the stove. Do not turn the chicken pieces over or stir till a nice brown color has been achieved on each side. Once the color is achieved turn the piece over and let it fry on the other side.

Add the garlic and ginger and let it fry with the chicken pieces.

Now add the onion pieces and let it fry. Add the tomato pieces if using tomato as well).

Add the soy sauce and stir.

Add the bell pepper and stir.

Add the liquid from the boiled chicken and stir. Let the liquid reduce to only cover the bottom.

Add the tomato sauce and stir.

Now add the french fries/fried potato wedges and give it a quick stir.

Note: The bell peppers are added at the end so cooking time is less and will maintain crunch. The fries should not be stirred too much as it may get soggy.
