Vegetable Dum Pavbajji Biryani

Place a pan on stove in medium flame add oil and fry onion till turns golden brown and remove onions once it turn brown

Add all veggies one after another till they get into smooth texture. Add these veggies into curd,garlic ginger paste,salt,red chilli powder,pav bajji powder and marinate them for 30mins. (add fried paneer into marinate,if you like)

Now boil water on another stove,add washed rice into it,in a soft cotton cloth add shajeera,soamp,star Anise tie it and let it boil with rice(add sufficient salt for rice while boil). once the rice is half cooked,remove potli and strain the water with the help of strainer.

Place the pan on the stove,add ghee,oil and add cloves,cinamon stick,elachi and bay leaf,let it fry for 2mins,ad ginger garlic paste fry it for 2 to 3mins, in a low flame add marinated stuff and rice layer by layer in pan(make sure rice layer should be on top like dum biryani)now pour the saffron liquid on rice, garnish with brown onions and mint leaves and dum it for 15mins to 20mins in low flame.
