This is a Sri Lankan recipe which goes really well with plain rice.

This is a Sri Lankan recipe which goes really well with plain rice.

Steps

Beat the egg with some pinch of salt and pepper add corn flour to it and mix it well. Keep it aside.

Wash and cut the eggplants in to stripes and soak it in the egg mixture for few seconds. Heat oil for deep frying in a pan, and when it's ready add bit by bit of the eggplants. fry it till crispy and golden brown.

Pan fry the Cashew nuts. till golden brown, sprinkle some salt while frying. keep it aside.

In a separate pan add a bit of oil for frying. Add chopped ginger, garlic, cloves, cinnamon,curry leaves and chopped onions. Eventually add turmeric powder, pepper powder and chili flakes. check the salt and do add if you need it.

Add the sugar in and give it a good mix.

Finally stir in the deep fried eggplants and the cashew nuts to the curry. serve it hot with plain rice.
