Brown rice is a great alternative to the white rice for diabetics. However it is not restricted to just that. Being fibrous it aids the digestive system, reduces cholesterol risk, maintains blood pressure and and has significant benefits for the heart.
The 8 years I spent at Bangalore got me hooked to Lemon rice, Sigh. The pillowy goodness with the crunch of urad dal and peanuts and perfect tang of lemon makes me want to rush back to Namma Ooru. I do not fry the peanuts off instead add roasted ones.
I swapped the white rice for brown one in one of my trials in the kitchen and it has been happily accepted by the husband too. Here is how I make it.

Ingredients

2-portion
  1. 300 gmsbrown rice cooked
  2. 2 tspsurad dal
  3. 6 - 7curry leaves
  4. 2 tspsmustard seeds
  5. 2 tspsturmeric powder
  6. 2 - 3 tspsghee
  7. 2green chillies
  8. 2lemons Juice of small
  9. a pinchasafoetida / heeng of
  10. to tasteSalt
  11. Handfulpeanuts Roasted
  12. coriander leaves some

Steps

  1. 1

    In a non stick pan, heat the ghee. Add mustard seeds, heeng and urad dal. Once it turns golden add cut green chillies and curry leaves. Let them splutter.

    Now add the turmeric powder and some salt. Put the rice in toss it until it is evenly covered in the gold spice mix.

  3. 3

    Add the lemon juice, some at a time and adjust to your taste buds. Toss in the peanuts and corriander leaves.

    Serve hot with chutney or as it is.
