Coconut shrimp with mango sauce

Ingredients

  1. 2 poundsShrimp extra-large (peeled and deveined)
  2. ½ Cupcornstarch
  3. 2 Tablespoonspanko (Eastern breading)
  4. 2 Cupscoconut unsweetened medium shredded .
  5. 3/4 Teaspoonsalt
  6. 3egg whites Large
  7. 1Mango
  8. 2 tbspslime juice .
  9. ¼Coconut milk
  10. 1 tablespoonhoney
  11. 1 tablespoonchopped ginger
  12. 1 tablespoonAvocado Oil ACADO™

Cooking Instructions

    For Coconut Shrimp: Add the cornstarch, egg, panko, coconut and salt in a large zip-lock bag and mix it well. Add the shrimps and shake it to coat it properly.

    Heat a pan on medium flame and add ACADO™ garlic infused Avocado oil in it. Now shallow fry the shrimp until it becomes crispy and golden brown.

    For Mango Sauce: Add mango, ginger, honey, lime juice, coconut milk, and salt to a food processor. Puree until smooth. Season with ACADO™ oil.
