I really want to try camping but I have no idea how. And none of my friends do either. But, it's the perfect time to learn in the fall right?! So, we had a dry run last night in our living room.
I marked my calendar months ago for the REI Garage Sale (formerly known as scratch and dent). If you like outdoorsy or athletic things and you don't know about this, you gotta get in on this. Basically, anything that is returned to an REI goes into the back and they bring it out for sale a few times a year marked (at least) half off. I knew this was the perfect time to buy a tent because, what if I end up not enjoying the whole camping experience? At least I only would have spent a little on the equipment instead of a lot right?! So, we rolled out of bed and went to REI Saturday morning post coffee. We are now fully equipped to camp... but still not really sure how. Time for a dry run! Last night we had our family over for Mom's birthday and I made her this butternut squash soup that embody's fall and talked about camping. After everyone left we brushed our teeth and slipped into our new sleeping bags, on our new tent pads, in our new tent.
I got hot at 2 am and bailed on Michael, went upstairs and cranked the AC. It was rough. I'll try again next weekend after I find a tent fan on amazon.

Ingredients

10-servings
  1. 1yellow onion medium , chopped
  2. 1sweet potato small , chopped into cubes
  3. 2butternut squash , peeled, seeded and chopped into cubes (save the seeds to roast and use as garnish)
  4. 1/2brown sugar ( to roast the seeds with) tbl
  5. 2granny smith apples large , cored and chopped
  6. 4 cansvegetable broth low sodium (32 oz total)
  7. 1 cancoconut milk ( the full fat kind - only add the separated top layer of cream)
  8. 1/2cream cheese bar (so, 4 oz)
  9. 1/2 teaspooncinnamon ground
  10. 1/4 teaspoonnutmeg ground
  11. 2 tablespoonsmaple syrup
  12. to tasteSalt black pepper and freshly ground

Cooking Instructions

    Add everything to the slow cooker except for the brown sugar, spices and maple syrup. Cook on low for 6 hours or on high for 3 1/2 to 4 hours.

    Roast the seeds with brown sugar in the oven at 400 degrees (I used my toaster oven) for about 5- 10 mins until golden brown. Watch them carefully so they don't burn.

    Once vegetables are cooked and soft, puree the soup using an immersion blender. Add the cinnamon, nutmeg, and maple syrup. Season with salt and pepper, to taste. If you don't have an immersion blender, you can transfer the soup to a blender (in batches) and puree until smooth. Pour the soup back into the slow cooker until your guests arrive.

    Ladle soup into bowls and garnish with roasted seeds and more nutmeg.
