▪︎ Prepare Homemade Paneer
Bring the milk to a boil. Lower the flame and gradually add vinegar while stirring continuously. Once the milk curdles completely, switch off the flame and let it rest for 2–3 minutes.
Strain through a muslin cloth or colander. Rinse well under clean drinking water to remove the vinegar taste. Drain thoroughly and transfer to a paneer mould or paneer press. Allow it to set into soft, moist paneer. Refrigerate until required.

▪︎ Prepare Cashew Paste
Soak the cashews in hot water for 15–20 minutes. Blend together with the soaking water into a smooth paste. Keep aside.

▪︎ Prepare Tomato Puree
Blend the tomatoes into a smooth puree. Keep aside.

▪︎ Fry the Paneer
Heat oil and butter in a pan. Add turmeric powder, red chilli powder and salt.
Place the paneer pieces and lightly sauté on low flame until lightly golden on both sides.
Add chopped ginger and green chillies. Sauté for another 30 seconds. Remove and keep aside.

▪︎ Prepare the Gravy
Heat oil and butter in a pan.
Add cumin seeds, cloves, green cardamoms, cinnamon and bay leaves. Sauté until aromatic.
Add chopped onions and cook until soft and light pink.
Mix in the ginger-garlic paste and sauté until the raw aroma disappears.
Add turmeric, red chilli powder, Kashmiri chilli powder, coriander powder and salt. Cook on low flame until the oil begins to separate.

Add the tomato puree and continue cooking until the masala thickens and releases oil.
Reduce the flame and stir in the whisked yogurt gradually. Cook until well incorporated.
Add the prepared cashew paste and mix until smooth and creamy.
Gently add the fried paneer pieces.
Mix in the fresh cream, Kitchen King Masala and roasted kasuri methi.

Pour in the hot water and stir gently.
Cover and simmer on low flame for 8 minutes.
Garnish with freshly chopped coriander leaves.
Serve hot with buttered parathas, naan, kulcha or jeera rice.
