  1. 2mackerel tuna (4 filets)
  2. 1tomatoes, cut into pieces
  3. 2lemons, juiced
  4. 5 Tbspcooking oil
  5. 100 ccwater
  6. GROUND SPICES
  7. 5onions
  8. 1 clovegarlic
  9. 10red chilis
  10. 1 chunkkencur
  11. 2 chunkginger
  12. SAMBAL SAUCE
  13. 5red chilis
  14. 50 gramscayenne pepper
  15. 100 grcurly chilis
  16. 10hazelnuts
  17. 5shallots
  18. 2 cm piecegalangal
  19. 2 cm pieceturmeric
  20. 2 tspsalt
  21. 1 tspsugar
  22. 2 Tbspcoconut milk powder
  23. 500 grlemongrass, white part and thinly sliced
  24. VEGETABLES
  25. 50 gcarrots , diced
  26. 50 gramsgreen beans, cut into medium pieces
  27. 75 gyoung corn

Steps

  1. 1

    Clean fish and separate head and spines (4 fillets).

  2. 2

    Place the tuna on a flat plate. Sprinkle with lemon juice, then steam for 30 minutes. Remove and set aside.

  3. 3

    To make the sambal: puree chili, hazelnut, onion, turmeric and sauté until fragrant. Add the sugar, salt and coconut milk powder.

    Heat oil and sauté the spice paste. Stir in the chopped tomatoes.

  5. 5

    Add lemongrass. Cook until desired consistency.

  6. 6

    Add tuna to enough water to cover. Cook until boiling, then remove from heat.

  7. 7

    Boil all vegetables boiled until cooked, remove and drain.

  8. 8

    Serve fish topped with sambal sauce and vegetables.
