Place 4 eggs in boiling water and cook for 10 more minutes.

Once cooked, peel the eggs and chop them into medium-sized pieces.

In a separate bowl, mix the ground beef with the remaining 2 eggs, breadcrumbs, rice, and salt.

Shape the meat mixture into balls, placing a piece of boiled egg inside each one. Make as many meatballs as you like—I made 12.

Blend the tomatoes, chipotle peppers, a little water, garlic, and salt until smooth.

Heat a little oil in a pot and add the blended sauce.

Add the meatballs, adjust salt to taste, and simmer until the rice inside the meatballs is fully cooked and tender.
