Ingredients

4-6 servings
  1. 2 tbsp.salted butter, divided
  2. 1 tbsp.olive oil
  3. 1large carrot, peeled and diced
  4. 1 stalkcelery, diced
  5. 1/2yellow onion, diced
  6. 3 clovesgarlic, minced
  7. 2 cupscooked shredded or chopped chicken
  8. 1/2 tsp.each salt, pepper, poultry seasoning
  9. 1/4 tsp.each paprika, ground mustard
  10. 1/8 tsp.ground coriander
  11. 3/4 cuplong grain rice
  12. 1 3/4 cupsunsalted chicken broth
  13. 3/4 cupfrozen peas
  14. 1/4 cupfreshly shredded white cheddar cheese
  15. 1/4 cupfreshly grated parmesan cheese + additional for topping

Cooking Instructions

    Add 1 tbsp of butter and the olive oil to a large pot with a tight fitting lid. Once it's all melted and hot, add the onion, celery and carrot with a pinch of salt. Stir often and cook until everything has had a chance to soften, about 5-7 minutes. Then add the garlic and cook until just fragrant, another minute or two more.

    Increase the heat to med-high and stir in the rice and seasonings. Let it cook, stirring often, for about 2 or so minutes to toast up the rice. Then stir in the broth and the chicken and give it all a good stir. Once it starts to come to a boil, cover it with the lid and reduce the heat to low. Cook for a total of 11-14 minutes, until the liquid has all absorbed and the rice is tender... In the last 3 or so minutes of cook time, stir in the peas.

    Remove the pot from the heat and immediately stir in the additional 1 tbsp of butter and both of the cheeses until everything is melted and incorporated in. Then serve, topped with a little extra freshly grated parmesan cheese.

I love to bake and to try out new recipes! I'm always on the lookout for simple dinners for busy weeknights. A lot of the recipes I post on here are ones I've found on Pinterest or from different bloggers, and that I've tried and really enjoyed, but I always reference to where I got the recipe from in the recipe description and the pictures are my own. If there's no source listed, then it's a rare recipe that I came up with. I have two wonderful kids and I hope to pass on my love of cooking and baking to them.
