Ingredients

25 minutes
Serves 1-2 servings
  1. 2large zucchini
  2. 1/2 cupbreadcrumbs (about 50 grams)
  3. 1/2 cupgrated Parmesan cheese (about 50 grams)
  4. Salt, to taste
  5. Black pepper, to taste
  6. Fresh parsley, to taste
  7. Olive oil, as needed to grease the baking sheet

Steps

  1. 1

    First, trim the ends off the zucchini and grate them into a bowl.

  2. 2

    Squeeze out as much water as possible from the grated zucchini.

  3. 3

    In another bowl, combine all the ingredients with the zucchini and mix well until everything is blended.

  4. 4

    Line a baking sheet with parchment paper and lightly grease it with olive oil.

  5. 5

    With your hands, form small patties from the zucchini mixture and flatten them with your palm.

  6. 6

    Place the fritters on the prepared baking sheet and bake at 350°F (180°C) for about 25 minutes, or until golden brown.
