I learnt to prepare this vegetables from my granny. She worked for a horticultural export company.
Steps

Boil your pumpkin and mash it. nic with floor and add little(salt) optional.

Keep it covered for 30 min after kneading.

Roll in to spiral balls and make your chapati.

For the vegetables, cut your onion and heat it brown.

Add carrots cut to your preferred size..stir for while.

Add egg plant (purple) and miungu(long ones) cut in small cubes
- 7
Cover for 10 min. keep stiring untill ready, add congets then red hoho cut in small cubes. stir and serve hot.

Very yammy for entire family. Best for vegetarians especially the Indians.
