Chimichurri Sauce

Ingredients: 1/2 cup assorted chopped fresh herbs, I used parsley, oregano,; thyme and chives; rhyme and chives; 1 shallot; 4 large garlic cloves; 1/4 cup red wine vinegar; 1 tablespoon seasoned rice vinegar; 1 teaspoon fresh grated lemon zest; 1/2 teaspoon each salt and pepper; 1 teaspoon granulated sugar; 1/2 cup olive oil, I use a mix of chili infused and Italian berb; 2 tablespoons fresh grated Romano cheese; 1/4-1 teaspoon red pepper flakes, depending on spice level

This chimichurri sauce is my non traditional version of the popular garlic herb sauce served with grilled meats and vegetables. I use tge traditional parsley and garlic adding other fresh herbs growing like weeds in my garden. I add other basic flavors for a bright bold fresh tasting addition to most grilled and roasted foods.

1/2 cupassorted chopped fresh herbs, I used parsley, oregano,

1/2 cupolive oil, I use a mix of chili infused and Italian berb
2 tablespoonsfresh grated Romano cheese

Combine all ingredients except oil and red pepper flakes in a food processor and chop finely'

Add olive oil and blend

Pour into bowl and stir in red pepper flakes. Serve with grilled meats and vegetables

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
