This chimichurri sauce is my non traditional version of the popular garlic herb sauce served with grilled meats and vegetables. I use tge traditional parsley and garlic adding other fresh herbs growing like weeds in my garden. I add other basic flavors for a bright bold fresh tasting addition to most grilled and roasted foods.

Ingredients

  1. 1/2 cupassorted chopped fresh herbs, I used parsley, oregano,
  2. thyme and chives
  3. rhyme and chives
  4. 1shallot
  5. 4large garlic cloves
  6. 1/4 cupred wine vinegar
  7. 1 tablespoonseasoned rice vinegar
  8. 1 teaspoonfresh grated lemon zest
  9. 1/2 teaspooneach salt and pepper
  10. 1 teaspoongranulated sugar
  11. 1/2 cupolive oil, I use a mix of chili infused and Italian berb
  12. 2 tablespoonsfresh grated Romano cheese
  13. 1/4-1 teaspoonred pepper flakes, depending on spice level

Steps

  1. 1

    Combine all ingredients except oil and red pepper flakes in a food processor and chop finely'

    Add olive oil and blend

    Pour into bowl and stir in red pepper flakes. Serve with grilled meats and vegetables

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
